Illinois Bird

Postby il_ray_phillips » 04 14, 2015 •  [Post 1]

Knocked me down a nice Illinois gobbler during the 1st season. Weather was tough and it took me 4 days. 24 lbs. 10 inch beard 7/8 inch spurs.

Sweet, beautiful bird, congrats! How will you cook/prepare it for decent table fare?

I cooked it on my Green Mountain Smoker. It was first time I smoked a wild turkey. It was a little dry but had great flavor.
I like cutting them up into nuggets and skillet frying them in oil, deep frying them or grinding them into burger. Not a lot
of meat on them but pretty good with a batch of fish or fresh mushrooms!

Nice Bird!

Next time you get one, mix up this brine and inject the bird, then soak overnight, prior to smoking on your Green Mountain - you won't believe the difference

This stuff is also amazing on Duck and Goose.

Just cooked a bird at work today after a brine soak overnight. The smell of that thing cooking all day made me perpetually hungry. I don't think there is a better or more tasty way to cook a turkey and keep it from drying out. Very tasty indeed.
I will try injecting it next time, thanks Curlytail.
