Holiday Snacks/Meals?

Postby WapitiTalk1 » 12 24, 2013 •  [Post 1]

So friends, what's on the menu this year? Traditional turkey, ham, standing rib roast, goose, moose, wapiti?

Xmas Eve: Kim and I will dunk a good portion of rye and french break chunks in some cheese fondue to accompany a grilled piece of filet mignon.
Xmas: Standing rib roast (prime rib), turkey breast, twice baked tatos (with all the fixins), french cut green beans (with a bit of tomato sauce and bacon chunks mixed in), salad, and Red Lobster garlic/cheese rolls (you can buy the box mix at Wally World).
New Years Eve: Always a seafood platter.

My most favorite Holiday snack ever made is 'Lefse'.
And I will be having it tonight - as my mom is a master lefse maker
Of course that accompanies ham, veggies, and all the other Christmas fixin's

For those that dont know what Lefse is:

Lefse is a traditional soft, Norwegian flatbread. It is made out of flour, cream, and sometimes lard, and cooked on a griddle. Potato is commonly added to make a dough that is easier to work with. Special tools are available for lefse baking, including long wooden turning sticks and special rolling pins with deep grooves.

Once made it can be flavored prior to eating.
There are many ways of flavoring lefse. The most common is adding butter to the lefse, and rolling it up. In Norway, this is known as "lefse-klenning". Other options include adding cinnamon and/or sugar, or spreading jelly or lingonberries upon it.

For years and years, Lutefisk was the Christmas eve dinner.
Good god, Im glad those days are over.
They dont make enough whiskey to chase that...

Lutefisk (Norwegian) or Lutfisk (Swedish) is a traditional dish of some Nordic countries. It is made from aged stockfish (air-dried whitefish) or dried/salted whitefish (klippfisk) and lye (lut). It is gelatinous in texture, and has an extremely strong, pungent odor. Its name literally means "lye fish."

We have ham and a spread of Mexican sides and traditional Sweet potatoes, green beans, etc. My wife is of Mexican heritage. Brad you bring back some nearly forgotten meals of Lutfisk and lefse. I will have ham and tortillas tomorrow. :D As a consequence of not killing an elk this past season, that will not be on my menu much this year.

Is that one big piece of flatbread or a bunch of them layered together on the plate in a fan style? Looks good however it's served!

Brad if you rolled up some lutfisk in the lefse, you would have a burrito.

I had that for Christmas eve as I have for the last 46 years.

Lefse- cnelk- The MN in you is coming through! My mother makes lefsa and it is a holiday staple. I can take it or leave it though. Butter and sugar when I do eat it. I am not Norwegian so I guess that explains it.

Eve- We had ham and fixins.

Christmas day- My daughter made loin of lamb. She also made a pesto to dip it in. Twice baked potatoes and green beans. Never had eaten lamb but it was great. (It better taste great since she bought the lamb with her parents money!)

How about prime rib, crab legs, and a big baked tatter. Desert and snacks was apple pie, pumpkin pie, chocolate desert, and frog eye salad. My wife slipped up and forgot the home made cherry pie this year. MMMMMMMMMMMMMMMM! can she make pies! Lots of other goodies also.
