why i think Venison (elk/deer) is better than beef.

it's the hind meat.

on a cow, i find rump meat borderline inedible. it just cooks dry and tough for me. it makes "okay" stew, i guess.

but venison, the same cut of the animal is fantastic. i made and brought in a gallon of venison - green chili stew to the office this morning. my city-folk office mates are blown away. meat is lean, meaty tasting, and tender. some of them even joked about "sponsoring" my future hunts, for a lion's share of the meat.

it's strange; counter intuitive. the hinds on any animal is the powerhouse. why is deer or elk rump so good?
