Made some sausage this weekend

The weather wasn't great this weekend so I decided to defrost some elk and make some sausage. I made brats, polish, and maple breakfast sausage. Anyone else make they're own?

Yes sir, we do. Got away from the brat's and started making brat patties a lot easier and taste just as good. Looks very good. How do you keep the area so clean? we got sh!t laying all over the place when we make venison.

Oh and no we do not, but plan to in the next year or two. For my family I shoot, clean and get most of the silver out of the whitetails. Dad does all of the cooking, but we grind everything :cry: (because we don't know any real cuts) cept for the backstraps those get wrapped in bacon.

I started a few years ago with breakfast sausage and summer sausage (using a kit), last year I bought an adapter for my grinder to stuff casings. It's a lot of fun to try different recipes, and the kids like to help grind (and eat it). Friday, do you cook them like burgers then? Sounds good. Phantom I've probably gained enough experience and knowledge from all you guys here to owe ya a beer and a brat! If you're ever in south central Idaho look me up!

Elkstalker, look into buying a dedicated sausage stuffer. I thought the grinder attachment was good enough. I bought a LEM stuffer this year and it works WAY better and easier than the grinder attachments. Definitely worth the money.

Another link where a few of us have talked about it.
Certainly the way to go. I like playing around with my own recipes and deciding what type and how much of a mix ratio of other meat to use.
I used a Big Sky Italian for my brats this year. Turned out great. It was from a RMEF book and Ill see if i can post it up here for others to try.

Edit: Forgot to mention they look good!

Yep, on the grill or in the frying pan. Add sauerkraut, pickles, ketchup, mustard or just plan. It's all good

We do the same for breakfast sausage.

I'll definately have to look into getting a stuffer, as well as a commercial grinder. As my kids all start to hunt and bring home game we're going to need to process more and more every year :D

Looks good. I love to make Italian sausage out of some of my elk meat. Also Chorizo. This year I took all my pheasants and made brats out of them. That's my new favorite.

OOOOOOH. Pheasant brats sound good! And I have never even tried pheasant.
