Mmm, that is a "tasty" burger!

So Elknuts... what do you like to eat? Regardless of your draw success from year to year, what are your top five (rank them please) North American (native) big game animals to grill, fry, crock, smoke, lightly burn on a willow stick over an open fire, bake, etc. No little critters (gators, squirrels, possums, bunnies, birds, armadillos, pigs, beaver, etc.). The new rule in our great nation is that you can hunt five big game animals for subsistence every year (we can only dream).. Rank your tastiest morsels from one to five. Mine, something like:

1. Elk - Rocky Mountain (Rooseys taste different to me.. perhaps the browse?)
2. Moose
3. Whitetail
4. Antelope
5. Bison (although they're not really wild, big game critters)

Sorry to wimp out on you, Rory.
There is no way I can honestly choose between buffalo, elk and antelope.
They are equally delectable!

After that, moose... at least from the four I've helped eat.

I really, really liked the one black bear that I've eaten... but, he was young and had never had garbage.

The worst whitetail I've ever ate would be better than the best mule deer... and I've killed well over 30 and 20, respectively.
Columbian blacktail I've had was always good... better than mule deer, not as good as whitetail.

I've heard tell that sheep is very good.
I've read that mountain lion was the old-timey trappers favorite.
Heard some good and some bad on caribou.
I've heard mostly neutral reports about mt goat... kind of so, so, I guess.

I like your list but I'd bump bison up there to number 2 and move the rest down 1 spot

Bison
Whitetail
Axis ( these things are pretty well native to central/south Texas nowadays )
Feral hog ( nice healthy Barr, never a boar )

Also gator is pretty large game from my experience :) but you fish for them more than hunt em anyway

My list would be the same as Trophyhill's. Caribou is ok, but Musk ox is great. If your lope is good, then it can stay on the list, but if not, just shorten up my list. I like lopes that have been hanging out around a pivot eating alfalfa. Those speed goats, foraging on sage, need to be penned up awhile and fed corn and oats.

I eat a ton of whitetail, but I believe I like elk better. I also agree on frog legs, and how can you exclude wild caught catfish?

pig if allowed by rules :)

deer
bear..not a junkyard bear. a small wild berry eating bear. so good!
and a very distant fifth.. wild goat things..like an aoudad. best curried!

I can't believe you western guys don't have the pronghorn higher on your lists!

I've killed about 25 of them over the last 32 years.
Most of them have been in 100% sage country.
Most have been rutting hard.
A couple have even been wounded for a few minutes before the coup de grace.
I've never had a bad one.... ever, and I'm picky!
What is happening to your goats?
I've always skinned them quick... usually within about an hour of killing them.
I've never gut-shot one.
I like every kind of steak med-rare... but, way closer to rare than medium!
I can't hardly eat any wild game if it's over-cooked.

My dogs enjoy all you can eat deer meat and the beagles love rabbit and turkey. I'm with Crazy... I eat nothing but elk.

Yeah, the lopes are tasty. Like Dawhiteshoe mentioned, it may depend on the browse they snack on though. The MT speed goats I've had are very good.

Tell ya what I'm not going to Colorado this summer but next summer I will be I'll catch you some fresh legs next may and bring em to ya. I like frog legs but elk meat has been pretty scarce since we didn't kill one last year. If I wind up hunting around rifle I'll bring some up during archery season.

I've only had Antelope 1 time. Given to me by a friend. It was very good! I applied in NM for 10 years before finally giving up. NM has some strange/shady rules and regs for lope. I think I'll try again for the 95 degree August hunt

The last 2 antelopes I shot were in 1973, Wyoming, sage country. I have never cared for the taste of them, and haven't hunted them since. I've tried eating other ones at wild game feeds or ones that friends have taken, but just don't care for them. Beautiful animals though!
Has anyone ever ate a bad elk? Not me. I have never heard anyone complain unless the cook messed up. :o

Only reason antelope is below deer is I haven't had antelope in 13 or so years and have deer yearly so due to a bad memory it is penalised.

RJ, I'll bring some moose burger with me this fall if I still have any remaining in the freezer by then :)

Here is my best recipe for antelope. Take 1 pound of antelope backstrap and mix it with 1 large can of Alpo. If you are lucky, maybe your dog will eat it that way. LOL!

Seriously, goat has a taste all it's own. And it isn't one that I have ever aquired.
