Rib Roll

Rib Roll

I've seen videos and other explanations of the "rib roll" to remove rib meat.

Question: How do you make best use of that "rib roll"?

Is it grinder-material? Or is there some other, tastier use?

If it were me, I would spend more time getting as much neck meat as I could instead of the sparse rib meat.
You will get more Lbs of meat for your efforts for the grinder

I have tried salvaging the rib meat, but many times that is where the most blood shot meat is... compared to the neck meat

Second that. Depending on how far we have to haul the meat, we often leave the ribs for the coyotes...
