Deep fried or lots of oil fried fish. Whats your recipte?

Long ago as a single guy fast and easy,.( and a bit boring)
fillet rolled in eggs than crushed saltines . With a "tarter sauce when using of Miracle Whip and and pickles I said when I was single !!
I
roll fillets in fine cornmeal, Alpine Lemon pepper, onion and garlic powder, and paprika , and fine ground hot red pepper
What do you fella do

I d o not do this with salmon,.. and may add more spice with trout if I not drowning it in Mayonnaise and pickle relish :roll:

Best ever was my first set of in laws. They had a cabin on Thompson Lake in MT. They had pretty much what was like a witch’s caldron full of oil. They’d hang it over a fire and we’d basket dip a ton of flowered and salt/peppered filets of bass, perch, sunfish, and pike in it. Soooo good. I think they used the same oil all summer, probably what contributed to the taste ;)

I love shore lunch or the spicy shore lunch, but my wife is gluten free, so I usually mix 50/50 gluten free flour and corn meal with salt, garlic powder, Italian seasoning and pepper. Soak the fish in milk, combine all the dry ingredients in a gallon ziplock, toss some fillets in the ziplock and shake, then fry. I also used to mix 50/50 breadcrumbs and flour with a similar spice mix. Season to taste with salt or seasoned salt immediately after the fish comes out of the oil.

Two parts corn meal to one part flour. Lots of lemon pepper spice. Coat and fry.

and for catfish ,,,, 1/2 garlic powder :o the other 1/2 cayenne pepper

I'm partial to tempura/panko combo. I season the tempura batter with salt, and then mix creole seasoning into the panko breading. Very light layer of tempura, right into the panko, and then I usually pan fry with about 1/2" of oil, since I don't have a deep fryer. Crispy, light, just the right amount of heat and flavor. Whole jar of Marina Tartar sauce. mmmmmmhmmmmmm
