Elk Recipes 2014

Nothing more, nothing less. Post em up ;)

Elk meatloaf:
2 lbs elk burger
1 diced red onion
1 diced red pepper
1 large egg
1 cup italian bread crumb seasoning (I like the stuff from Safeway... has a good garlic flavor)
1 tbs winchester sauce
1/2 tsp cumin
1/2 cup grated cheese (extra sharp)
1/2 cup ketchup

Sweet tomato sauce:
1 can (16 oz) Tomato sauce
2 tbs brown sugar (can use more if you like)
A few shakes of allspice (I actually use Alpine Touch, Montana's Special seasoning).

Sauce - Can of tomato sauce, brown sugar, and seasoning... place in small pan to simmer.

The loaf - Preheat oven to 350 while mixing ingredients. Rub sides and bottom of teflon meatloaf pan with oil. Form loaf and place in pan (leave a canoe like indent in the top); cover pan with one layer of tin foil. Put it in the oven for 1 hour... At around 45 minutes, remove foil and place 1/4 cup of the sauce on top. Continue to cook for 15 to 30 minutes, depending on wellness desired. Once out of oven, let cool for a good 10 mintutes before slicing. Drizzle each piece with some of the sweet sauce. Serves well with any kind of tatos and veggies.

I will have to try that one!
So far its been steaks for me.
This one is an elk tenderloin rubbed down with tatonka dust seasoning. Pre-heat grill to 500+, 2-3 minutes per side and shut off the heat. After turning the second time leave it on the grill without opening the lid to allow it to bake for 5-6 minutes. Wrap in foil after to retain heat and hold all of the juices in. Let stand for 5 more minutes and then enjoy.
This one is with asparagus and sweet potato......oh yeah and a little red wine

I have a mozzarella stuffed elk meatball recipe I will dig out. Very good one.

Mozzarella stuffed elk meatballs

1.5 lbs ground elk or venison burger
5 tablespoons olive oil
1 white onion diced
2 garlic cloves diced
1 teaspoon thyme
¼ teaspoon rosemary
3 slices white bread without crusts
1/2 cup milk
1 egg beaten
½ cup grated parmigiano-reggiano cheese
Mozzarella cheese balls (size of cherry tomatoes)
1 – 28oz. can diced plain tomatoes
Fresh basil chopped
½ cup dry red win

I like it with Angel Hair Pasta.

Anyone have a summer sausage recipe they would be willing to share? I'm going to try making some and then cooking it in the smoker.

Here is a pretty good jerky recipe I like. I sometimes substitute Dr. pepper for cola.

1 cup brewed strong coffee or espresso, cold
1 cup cola
1/2 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup brown sugar
1 tablespoons Morton Tender Quick® curing salt (optional)
1-1/2 teaspoons freshly ground black pepper
1 tablespoon hot sauce
2 pounds trimmed beef top or bottom round, sirloin tip, or flank steak
PREPARATION
1. In a mixing bowl, combine the coffee, cola, soy sauce, Worcestershire sauce, brown sugar, curing salt (if using), pepper, and hot sauce.

2. With a sharp knife, slice the beef into 1/4-inch thick slices against the grain. (This is easier if the meat is partially frozen.) Trim any fat or connective tissue. Put the beef slices in a large resealable plastic bag. Pour the marinade mixture over the beef, and massage the bag so that all the slices get coated with the marinade. Seal the bag and refrigerate for several hours, or overnight.

Years back an acquaintance family owned and ran a lodge in Alaska About all the red meat smoked or fried marinated in equal parts soy sauce, brown sugar and water
then other seasonings black, mild or hot peppers soaked less than an hour for cooking, sliced meat soaked for a day before jerked. My kids love duck and goose cooked or smoked


Pan fried
olive oil in a hot pan, sear both sides, season with your favorite seasoning, and add butter, and fry till the temp is 140; salt if you wish when your done. the butter should be browned when done, really enhances the flavor

I like Montrose steak seasoning, my kids eat Johny;s
