Favorite Jerky Recipe

As the title says. Interested in some jerky recipes.

4 lbs venison flank steak.
1/2 medium onion, diced.
1/4 teaspoon thyme.
2 bay leaves.
2 garlic cloves, crushed.
2 teaspoons freshly ground pepper.
2 whole cloves.
1/2 cup vinegar.
1 cup dry red wine.
1 cup worcestershire sauce.
1 cup soy sauce.


Cut off all fat and gristle from meat. cut meat with grain into thin slices. Combine all ingredients except for meat in a large bowl, stir it pretty good. Put the meat in a suitable container ( I use a large pyrex casserole dish ) and than poor the marinade over the strips. marinade it overnight in the refrigerator, ( I like 15 hours ). Next you are supposed to squeeze the excess liquid out with a rolling pin, but I have found that giving the strips a quick shake is sufficient, next you put them in the dehydrator! I have not figured out the temperature that my dehydrator runs at, but 1/4 inch thick strips take 6-8 hours to be cooked thoroughly. I flip them about halfway through.

I suck at cutting the strips consistently 1/4 inch thick, so its a lot of trial and error. With that said, literally every person that has tried my jerky has said its the best they have ever had! The recipe came from a friend with a wild game cook book. Its good stuff!
