Making Sausage

Just got into sausage making this winter.

Got a commercial grade grinder, and a sausage stuffer.

So far, made 30lbs. of Bologna, 25lbs. of breakfast sausage patties, 20 lbs. of breakfast sausage links, and 25lbs. of snack sticks.

Using 80% Duck and Goose breasts, and 20% pork butt - then smoking them on the Louisiana pellet grill

So far really enjoying trying this. Still have some duck meat to use up. The Bologna, and snack sticks have turned out the best.

How many ducks and geese do you need to shoot to make 100lbs of sausage?

Don't really keep count. But we hit it pretty hard , and the season is long these days.
