Elkloaf

Baked up a pretty darn good elkloaf last night.

Mix it up and put in standard sized loaf pan:

1 1/2 lb elk burger (no suet)
1/2 lb lean beef burger
3/4 cup break crumbs
1 egg
1/2 WW Sweet Onion/chopped
1 diced green pepper
Splash of Winchester sauce
Few good shakes of Alpine Touch Hickory Smoke seasoning
Few grinds of pepper
1/4 cup ketchup
Squirt of Dijon mustard

Sauce (bring to rolling boil then simmer):

1 can tomato sauce
Extra big squirt of ketchup
2 TBS brown sugar
2 TBS blackberry jam
Tiny bit of Liquid Smoke/Hickory


Bake covered elkloaf at 325 for about 1 1/2 hours; remove tin foil; spoon on some of the sauce; continue to bake for another 15 minutes or so. We like our meatloaf a bit crispy on the outside so I kick on the broiler for 5 or 6 minutes at the end. Let elkloaf cool for 10 minutes, slice, and serve with a goodly portion of the sauce spooned on it.

My wife makes the elkloaf in our house, so I'm not exactly sure on the recipe, I do know that she uses BBQ sauce, that sweetens it up a bit, and oatmeal (she cannot eat gluten). Definitely one of my favorites with a side of mashed taters :)
