Corned Elk Brisket

As a dual purpose dinner for St. Patrick’s and my wife’s birthday, I made corned elk brisket and cabbage. Corned brisket and cabbage is one of her favorite nostalgic meals. Not the top of my list, but this was for her, not me.

Here is the recipe used to corn the elk brisket. Worked great. I added ½ tsp sodium nitrate as I brined it about 8 days. In retrospect, I might have decreased the salt a little, increased the sodium nitrate, so that it could be brined a full 10+ days. The center of the cuts were not colored the same as the outside, and I presume this was because there was not enough time for penetration all the way through.

Here is the cooking recipe for brisket and cabbage. Keep the temp 150-155 if you can, and cook it low and long.

Sorry, no pics. Elk brisket corns quite well, and it turned out to be one of her favorite elk dishes of all time.
