Southern NM green chile meat

I guess since I asked for this forum I should support it more. This is a simple dish one of the guys at work would make a few times a year that was always a hit.

2 lbs ground elk
2 cups Hatch green chile (about a 1 pound of packaged)
1 onion
2 cloves garlic
1 qt chicken broth
3 Yukon gold potatoes
Salt
1 bay leave
1/8 teaspoon cumin

Brown meat, salt to taste. cook with onion till translucent add cumin and garlic for just the last minute or two. Deglaze with broth. Add to crock pot on low for about an hour or overnight. Dice potatoes small. Add potatoes in morning allow to simmer for about an hour.

The feedback I got the last time I made it was "more garlic" and "more onion".

I assume the recipe should include some green chili as well?

We always call that green chile stew.We also add a can of Cream of potatoe soup.

Made pot of it this afternoon

that is damn the exact recipe my mom made as kids growing up. we called it "burrito meat"

i now know it as chili con carne. when i make it now the first 12 oz of fluid is a mexican amber beer.

and i have 1lb of hatch chili left in my freezer. damn near catastrophic. oh, i get it all hot on the stove top and put the entire (enamel coated dutch oven) into a 300 degree oven to simmer. the heat coming at it from all sides is a game changer. all my slow cooking is done like this now.
