Figured that would get your attention :D. Yep, you've knocked down Barney Bull (or Sam Spike or Courtney Cow) earlier today. After some serious packing, you either have your meat hanging to cool down over the bank from camp, over a stream on logs, in a culvert on a stack of rocks, or maybe even down to the local meat locker already. NOW, you're back at camp with perhaps a loin and a good chunk of back straps to cook up for you and your crew after a good day in the elkwoods. I ask simply this..... how do you cook it? Let's go.................. ;)

Thats a dirty rotten trick. Just for that, im going to take the first post on the 2017 meatpole, on a blatant b.s. technicality! Take it up with the supreme court if ya dont like it!

Since we're packed in mine would be with some Montreal steak seasoning either on a fire or skillet with some instant potatoes. It's better than it sounds lol

My preference is to either barbeque it or dip it in flour and fry . If I barbeque, I prefer it a little thicker than when it is fried. My preference is always for simple. Don't marinate or anything fancy. I enjoy the taste of good elk steak. Some Alpine touch seasoning is a nice addition, but not too much.

We are just day trippers here but would most likely sear with butter on a CI pan then cook over a alder fire with salt, pepper, and a dash of garlic. Cooked med rare/well and allowed to rest till warm then slice and dip in pore mans A1, a mix of ketchup and worshtershire sause

Red meat. pre cook some onions in coconut oil and butter.
Turn the heat up when the oil is starting to smoke toss a room temperature piece of meat in the pan, flash cook both sides, sometimes ( depending on the butter, Alpine seasoning). If we have mushrooms,.. lots of them with the onions and more butter

If its over cooked ( anything above medium is over cooked) Ill dip in honey mustard, Sweat Baby Rays BBQ sauce or # 7

Easy on the coconut oil. When used properly, it has its place, but easy to screw up a meal with. Pretty powerful stuff. Dont know if i would use it on a red meat dish, but thats just me.

Agreed, dirty trick. But this reminds me to add meat cooking supplies to my base camp list. All dinners so far are of the "pre-frozen drop bag in boiling water" type for two week camp.

If it's not blown to pieces, the heart is always my first meal, slice thin, dredge in flour and spices, and fry in oil with breaded onions

in this situation, the best way is skewered and cooked over an open fire....no seasoning. something about it is just so right, and good....now i'm hungry...for elk season next year.

i would be doing elk heart tacos back at camp.

the loins would be the appetizer..quick HOT sear, and simple salt and pepper.

I often ad butter the last moment when cooking red meat and take off the heat when the butter begins to brown
My wife likes popcorn made with coconut oit I like eggs made in coconut oil.
However I find Coconut oil a hassle to work with.
